  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (or almond flour for gluten-free)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 2 green onions chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, ginger, salt, black pepper, and red pepper flakes. Mix until just combined.
  • Roll the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  • In a separate bowl, whisk together the sweet chili sauce, soy sauce, and rice vinegar.
  • Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.
  • During the last 5 minutes of baking, brush the meatballs with the sauce mixture for extra flavor.
  • Remove from the oven and let them cool slightly. Garnish with chopped green onions before serving.
