- 1 pound ground chicken
- 1/2 cup breadcrumbs (or almond flour for gluten-free)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic (minced)
- 1 teaspoon ginger (minced)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 2 green onions chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, ginger, salt, black pepper, and red pepper flakes. Mix until just combined.
- Roll the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
- In a separate bowl, whisk together the sweet chili sauce, soy sauce, and rice vinegar.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.
- During the last 5 minutes of baking, brush the meatballs with the sauce mixture for extra flavor.
- Remove from the oven and let them cool slightly. Garnish with chopped green onions before serving.
