  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 packet fajita seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked rice (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet, add chicken, and cook until golden brown (5-7 minutes).
  2. Add sliced onion and bell peppers; sauté for 5 minutes until tender.
  3. Sprinkle fajita seasoning, then stir in black beans, corn, and salsa.
  4. In a greased baking dish, layer half of the chicken mixture, add rice if using, then top with remaining mixture.
  5. Sprinkle shredded cheese on top.
  6. Bake at 350°F (175°C) for 25-30 minutes until cheese is bubbly and golden.
