- 1 cup unsalted butter (softened)
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon espresso powder or instant coffee
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 tablespoon milk
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing well until fully incorporated.
- In another bowl, combine the flour, cocoa powder, baking soda, salt, and espresso powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Use a cookie scoop to drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between each one.
- Bake for 10-12 minutes, or until the edges are set. Let them cool completely on a wire rack.
- While the cookies cool, prepare the filling by whisking together the mascarpone cheese, powdered sugar, and milk until smooth.
- Once the cookies are cool, spread a generous amount of the mascarpone filling on the flat side of one cookie, then top it with another cookie to create a sandwich.
- Dust the assembled cookie sandwiches with cocoa powder before serving.
