  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon espresso powder or instant coffee
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • Cocoa powder for dusting

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs and vanilla extract, mixing well until fully incorporated.
  • In another bowl, combine the flour, cocoa powder, baking soda, salt, and espresso powder.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Use a cookie scoop to drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between each one.
  • Bake for 10-12 minutes, or until the edges are set. Let them cool completely on a wire rack.
  • While the cookies cool, prepare the filling by whisking together the mascarpone cheese, powdered sugar, and milk until smooth.
  • Once the cookies are cool, spread a generous amount of the mascarpone filling on the flat side of one cookie, then top it with another cookie to create a sandwich.
  • Dust the assembled cookie sandwiches with cocoa powder before serving.
