  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 tablespoon espresso powder
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped nuts (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter, granulated sugar, brown sugar, and espresso powder until light and fluffy.
  • Add the vanilla extract and eggs, mixing until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chocolate chips and nuts, if using.
  • Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Bake for 10-12 minutes, or until the edges are golden. The centers might look a bit soft, but they will firm up as they cool.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
