- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 tablespoon espresso powder
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups semi-sweet chocolate chips
- 1 cup chopped nuts (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter, granulated sugar, brown sugar, and espresso powder until light and fluffy.
- Add the vanilla extract and eggs, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and nuts, if using.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are golden. The centers might look a bit soft, but they will firm up as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
