Instructions
- Grate the potatoes and squeeze out excess moisture.

- In a separate pan, cook the bacon until crispy, then use the fat to make a gravy with flour and milk.
- Fry the eggs to your preference.
- Assemble by placing hash browns on a plate, topping with an egg and drizzling with bacon gravy, garnished with green onions if desired.
