Ingredients

  • 1-2 pounds of pork tenderloin
  • 1 cup of mushrooms (sliced)
  • 2 tablespoons of olive oil
  • 3 cloves of garlic (minced)
  • 1 teaspoon of thyme (fresh or dried)
  • Salt and pepper to taste
  • ½ cup of chicken broth
  • 1 tablespoon of soy sauce (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and season pork with salt, pepper, and thyme.
  2. Heat olive oil in an oven-safe skillet and sear the pork for 3-4 minutes on each side until golden brown.
  3. Remove the pork and sauté mushrooms and garlic in the same skillet for about 5 minutes.
  4. Return the pork to the skillet, add chicken broth and soy sauce, then transfer to the oven.
  5. Roast for 15-20 minutes until the internal temperature reaches 145°F (63°C), then let it rest before slicing and serving.
