- 1–2 pounds of pork tenderloin
- 1 cup of mushrooms (sliced)
- 2 tablespoons of olive oil
- 3 cloves of garlic (minced)
- 1 teaspoon of thyme (fresh or dried)
- Salt and pepper to taste
- ½ cup of chicken broth
- 1 tablespoon of soy sauce (optional)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C) and season pork with salt, pepper, and thyme.
- Heat olive oil in an oven-safe skillet and sear the pork for 3-4 minutes on each side until golden brown.
- Remove the pork and sauté mushrooms and garlic in the same skillet for about 5 minutes.
- Return the pork to the skillet, add chicken broth and soy sauce, then transfer to the oven.
- Roast for 15-20 minutes until the internal temperature reaches 145°F (63°C), then let it rest before slicing and serving.
Notes
- Ensure the pork is at room temperature before cooking for even cooking.
- Use a meat thermometer to check for doneness.
