Ingredients

  • 4 tablespoons of unsalted butter
  • 1/2 cup of heavy cream
  • 2 large egg yolks
  • Salt and pepper to taste

Instructions

  1. Peel and quarter the russet potatoes.
  2. Boil the potatoes in salted water for 15-20 minutes until fork-tender.
  3. Drain and mash the potatoes with butter, heavy cream, egg yolks, salt, pepper, and nutmeg.
  4. Pipe the mashed potatoes into mounds on a parchment-lined baking sheet.
  5. Bake at 400°F (200°C) for 20-25 minutes until golden brown.
