- 1 pound ground beef (or turkey/chicken)
- 1 packet taco seasoning
- 1 head romaine lettuce (chopped)
- 2 cups cherry tomatoes (halved)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans ((15 oz), rinsed and drained)
- 1 cup corn (canned or frozen)
- 1 cup sour cream
- 1 cup salsa
- 1 bag Doritos (regular or nacho cheese flavor)
- Optional: sliced jalapeños, avocado, cilantro (for garnish)
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the taco seasoning to the meat, following package instructions (usually adding water and simmering for a few minutes).
- While the meat cooks, chop the lettuce and prepare the other vegetables.
- In a large bowl, combine the chopped lettuce, halved cherry tomatoes, black beans, corn, and shredded cheese.
- Add the taco meat to the bowl and toss everything together gently.
- In a separate bowl, mix the sour cream and salsa until well combined. This will be your dressing!
- Right before serving, crush the Doritos and sprinkle them over the salad.
- Drizzle the sour cream and salsa mixture on top and garnish with optional toppings like jalapeños or avocado.
