Ingredients
Scale
- 8 ounces dark chocolate ((at least 70% cocoa), chopped)
- 1/4 cup unsweetened cocoa powder
- 1/2 cup heavy cream
- 2 large eggs (separated)
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 medium orange (zest only)
- pinch salt
Instructions
- Start by melting the dark chocolate. You can do this in a double boiler or microwave. If using a microwave, heat in 30-second intervals, stirring in between, until smooth.
- In a large bowl, whip together the heavy cream until it forms soft peaks. Set aside.
- In another bowl, combine the egg yolks and sugar. Whisk until it becomes pale and thick.
- Add the melted chocolate, cocoa powder, vanilla extract, and orange zest to the egg mixture. Stir until fully combined.
- Gently fold in the whipped cream until no white streaks remain.
- In a separate bowl, whip the egg whites until they form stiff peaks.
- Carefully fold the egg whites into the chocolate mixture. This will give your mousse a light and airy texture.
- Divide the mousse into individual cups and refrigerate for at least 2 hours to set.
- Once set, garnish with additional orange zest or chocolate shavings if desired. Enjoy!
