- 1 cup tahini
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/4 cup coconut oil, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup dark chocolate chips
- 3/4 cup unsalted pistachios, chopped
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine tahini, brown sugar, granulated sugar, and melted coconut oil. Mix until smooth.
- Add in the egg and vanilla extract. Stir until fully incorporated.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t overmix!
- Fold in the dark chocolate chips and chopped pistachios.
- Using a cookie scoop, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. They may look a bit underbaked, but that’s okay!
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
