- 1 cup dark chocolate chips
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup cherry pie filling
- optional fresh mint leaves for garnish
Instructions
- Melt the dark chocolate chips in a microwave or double boiler until smooth. Let it cool slightly.
- In a mixing bowl, beat the softened cream cheese until creamy. Add in the powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth.
- Using cupcake liners, spoon a layer of melted dark chocolate into each liner, about 1/3 full. Allow the chocolate to set in the fridge for about 15 minutes.
- Once set, fill each cup with the cheesecake mixture, smoothing the tops with a spatula.
- Add a spoonful of cherry pie filling on top of each cheesecake layer.
- Top with another drizzle of melted dark chocolate, if desired. Chill for at least 2 hours before serving.
