A refreshing and easy salad featuring cucumbers, mozzarella, and a zesty dressing.

Ingredients

  • 2 large cucumbers (sliced (peeled if preferred))
  • 1 cup cherry tomatoes (halved)
  • 8 ounces mozzarella balls (drained)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh basil leaves (torn)
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper (to taste)

Instructions

  • Wash the cucumbers and tomatoes. Slice cucumbers into thin rounds and halve the cherry tomatoes.
  • In a large bowl, combine sliced cucumbers, halved tomatoes, mozzarella balls, and red onion.
  • Add torn basil leaves to the bowl.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Drizzle over the salad.
  • Toss gently to combine. Let it sit for 10 minutes to meld flavors.
  • Serve immediately or chill before serving.
