- 2 large cucumbers (sliced (peeled if preferred))
- 1 cup cherry tomatoes (halved)
- 8 ounces mozzarella balls (drained)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup fresh basil leaves (torn)
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper (to taste)
Instructions
- Wash the cucumbers and tomatoes. Slice cucumbers into thin rounds and halve the cherry tomatoes.
- In a large bowl, combine sliced cucumbers, halved tomatoes, mozzarella balls, and red onion.
- Add torn basil leaves to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Drizzle over the salad.
- Toss gently to combine. Let it sit for 10 minutes to meld flavors.
- Serve immediately or chill before serving.
