  • 1 pound ground beef (or turkey for a lighter option)
  • 2 cups marinara sauce
  • 12 ounces no-boil lasagna noodles
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 2 cups chopped vegetables (such as spinach, mushrooms, or zucchini)
  • 1 teaspoon Italian seasoning

Instructions

  • Brown the ground beef in a skillet over medium heat until no longer pink. Drain any excess fat.
  • In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and pepper until smooth.
  • Layer ingredients in the Crockpot: start with marinara sauce, then noodles, ricotta mixture, ground beef, and mozzarella. Repeat layers.
  • Top with remaining noodles and sauce, then sprinkle mozzarella and Parmesan cheese on top.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours, until the cheese is bubbly.
  • Let sit for 10 minutes before serving. Enjoy!
