Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a pan and sauté the minced garlic for about 1 minute.
- Add diced potatoes to the crockpot, place seasoned chicken on top, pour over garlic and oil mixture, add chicken broth, and sprinkle Parmesan cheese.
- Cover and cook on low for 6-8 hours or high for 4-6 hours.
- Garnish with parsley if desired and serve hot.
