  • 4 cups fresh or frozen corn
  • 1 cup diced potatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika (optional)
  • to taste Green onions or chives for garnish

Instructions

  • Start by creaming the corn: If using fresh corn, cut the kernels off the cob. If using frozen, measure out your corn.
  • Chop your potatoes, onion, and garlic. Add all these ingredients to the Crockpot.
  • Pour in the broth and season with salt, pepper, and smoked paprika. Stir everything together.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  • About 30 minutes before serving, add the heavy cream. Stir well and let it warm through.
  • Once ready, taste and adjust seasoning if needed. Serve hot, garnished with green onions or chives.
