- 4 cups fresh or frozen corn
- 1 cup diced potatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional)
- to taste Green onions or chives for garnish
Instructions
- Start by creaming the corn: If using fresh corn, cut the kernels off the cob. If using frozen, measure out your corn.
- Chop your potatoes, onion, and garlic. Add all these ingredients to the Crockpot.
- Pour in the broth and season with salt, pepper, and smoked paprika. Stir everything together.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- About 30 minutes before serving, add the heavy cream. Stir well and let it warm through.
- Once ready, taste and adjust seasoning if needed. Serve hot, garnished with green onions or chives.
