Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup of all-purpose flour
  • 1/4 cup of olive oil
  • 1/2 cup of chicken broth
  • 1/4 cup of fresh lemon juice
  • 2 cloves of garlic, minced
  • 1/4 cup of capers
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Dredge chicken in flour, shaking off excess.
  3. Heat olive oil in a skillet and sauté chicken for 2-3 minutes on each side until golden brown.
  4. Place chicken in a crockpot and add chicken broth, lemon juice, garlic, and capers; stir gently.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  6. Garnish with fresh parsley and serve.
