Ingredients

  • 1 lb ground beef (or turkey for a lighter option)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 can (15 oz) kidney beans (rinsed and drained)
  • 1 can (15 oz) corn (drained)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 cup beef or chicken broth
  • 1 small onion (diced)
  • 1 small bell pepper (diced)
  • to taste salt and pepper
  • as desired optional toppings (such as shredded cheese, sour cream, avocado, tortilla chips)

Instructions

  • Brown the ground beef in a skillet over medium heat. Drain excess fat and transfer to the Crock Pot.
  • Add diced onion and bell pepper to the Crock Pot over the beef.
  • Stir in black beans, kidney beans, corn, diced tomatoes, taco seasoning, and broth.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Taste and adjust seasoning with salt and pepper before serving.
  • Serve hot with desired toppings.
