Ingredients

  • 3 to 4 pounds of pork roast (shoulder or loin works best)
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 2 cups of low-sodium chicken broth
  • 2 tablespoons of soy sauce
  • 1 tablespoon of Worcestershire sauce
  • 1 tablespoon of dried thyme
  • 1 tablespoon of paprika
  • Salt and pepper to taste
  • Vegetables of your choice (carrots, potatoes, or celery)

Instructions

  1. Pat the pork roast dry and season with salt, pepper, and paprika.
  2. Optional: Sear the meat in a skillet over medium-high heat for 4-5 minutes on each side.
  3. Layer chopped onion and minced garlic in the crock pot, place the pork roast on top, and add broth, soy sauce, Worcestershire sauce, thyme, and vegetables.
  4. Cover and cook on low for 8-10 hours.
  5. Shred the meat with two forks and mix it with the juices in the pot.
