- 1.5 pounds boneless, skinless chicken breasts
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Start by placing the chicken breasts at the bottom of your crock pot.
- Add the diced onion and minced garlic on top of the chicken.
- Pour in the chicken broth and diced tomatoes, making sure everything is submerged.
- Sprinkle the dried Italian herbs, salt, and pepper over the top.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Once the chicken is cooked through, shred it using two forks and return it to the pot.
- Stir in the heavy cream and Parmesan cheese until well combined.
- Let it cook for another 30 minutes to thicken and meld the flavors.
- Garnish with fresh parsley before serving.
