  • 1.5 pounds boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Start by placing the chicken breasts at the bottom of your crock pot.
  • Add the diced onion and minced garlic on top of the chicken.
  • Pour in the chicken broth and diced tomatoes, making sure everything is submerged.
  • Sprinkle the dried Italian herbs, salt, and pepper over the top.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  • Once the chicken is cooked through, shred it using two forks and return it to the pot.
  • Stir in the heavy cream and Parmesan cheese until well combined.
  • Let it cook for another 30 minutes to thicken and meld the flavors.
  • Garnish with fresh parsley before serving.
