  • 1 pound squid (cleaned and cut into rings)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon chili powder (optional)
  • Vegetable oil for frying
  • Lemon wedges for serving

Instructions

  • Start by cleaning the squid. Remove the head and innards, then cut the body into rings. Rinse and pat dry.
  • In a bowl, mix the flour, cornstarch, salt, pepper, and chili powder until well combined.
  • Heat oil in a deep frying pan over medium-high heat. You’ll know it's ready when a small drop of batter sizzles on contact.
  • Toss the squid rings in the flour mixture until coated evenly.
  • Fry the squid in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown.
  • Remove with a slotted spoon and drain on paper towels to remove excess oil.
  • Serve immediately with lemon wedges and your favorite dipping sauce!
