- 2 cups cooked rice (white or brown)
- 1 can salmon ((14.75 oz), drained and flaked)
- 1/2 cup breadcrumbs (panko for extra crunch)
- 1/4 cup green onions (chopped)
- 1/4 cup mayonnaise
- 1 large egg (beaten)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil (for frying)
Instructions
- In a large mixing bowl, combine the cooked rice, flaked salmon, green onions, mayonnaise, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Shape the mixture into small balls or patties, about the size of a golf ball.
- Roll each ball in breadcrumbs until fully coated.
- Heat vegetable oil in a frying pan over medium heat. You’ll want enough oil to cover the bottom of the pan.
- Once the oil is hot, carefully add the rice bites in batches. Fry until golden brown, about 3-4 minutes per side.
- Remove the bites and place them on a paper towel-lined plate to absorb excess oil.
- Serve hot with your favorite dipping sauce!
