  • 2 cups cooked rice (white or brown)
  • 1 can salmon ((14.75 oz), drained and flaked)
  • 1/2 cup breadcrumbs (panko for extra crunch)
  • 1/4 cup green onions (chopped)
  • 1/4 cup mayonnaise
  • 1 large egg (beaten)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil (for frying)

Instructions

  • In a large mixing bowl, combine the cooked rice, flaked salmon, green onions, mayonnaise, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Shape the mixture into small balls or patties, about the size of a golf ball.
  • Roll each ball in breadcrumbs until fully coated.
  • Heat vegetable oil in a frying pan over medium heat. You’ll want enough oil to cover the bottom of the pan.
  • Once the oil is hot, carefully add the rice bites in batches. Fry until golden brown, about 3-4 minutes per side.
  • Remove the bites and place them on a paper towel-lined plate to absorb excess oil.
  • Serve hot with your favorite dipping sauce!
