  • 1 cup of breadcrumbs (preferably panko)

  • 1/4 cup of finely chopped bell pepper
  • 2 cloves of garlic, minced

Binders & Flavor

  • 2 large eggs
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of fresh lemon juice
  • Salt and pepper to taste

Frying

  • Oil for frying (vegetable or canola oil works best)

Instructions

  1. Prepare the Ingredients: Drain the canned salmon and flake it into a large bowl. Remove any bones or skin if necessary.
  2. Mix the Ingredients: Add breadcrumbs, chopped onion, bell pepper, garlic, eggs, Dijon mustard, lemon juice, salt, and pepper to the salmon. Mix well until combined.
  3. Form the Croquettes: Shape the mixture into patties about 2-3 inches in diameter. Place on a parchment-lined tray.
  4. Heat the Oil: Heat about 1/4 inch of oil in a large skillet over medium heat. Test readiness by dropping in a small piece of the mixture; it should sizzle.
  5. Fry the Croquettes: Add croquettes to the skillet without overcrowding. Fry 3-4 minutes per side until golden brown and crispy.
  6. Drain and Serve: Transfer croquettes to a paper towel-lined plate. Serve warm with tartar sauce or spicy aioli.
