Base
- 1 can (14.75 ounces) of salmon, drained and flaked
- 1 cup of breadcrumbs (preferably panko)
Vegetables & Aromatics
- 1/4 cup of finely chopped onion
- 1/4 cup of finely chopped bell pepper
- 2 cloves of garlic, minced
Binders & Flavor
- 2 large eggs
- 1 tablespoon of Dijon mustard
- 1 tablespoon of fresh lemon juice
- Salt and pepper to taste
Frying
- Oil for frying (vegetable or canola oil works best)
Instructions
- Prepare the Ingredients: Drain the canned salmon and flake it into a large bowl. Remove any bones or skin if necessary.
- Mix the Ingredients: Add breadcrumbs, chopped onion, bell pepper, garlic, eggs, Dijon mustard, lemon juice, salt, and pepper to the salmon. Mix well until combined.
- Form the Croquettes: Shape the mixture into patties about 2-3 inches in diameter. Place on a parchment-lined tray.
- Heat the Oil: Heat about 1/4 inch of oil in a large skillet over medium heat. Test readiness by dropping in a small piece of the mixture; it should sizzle.
- Fry the Croquettes: Add croquettes to the skillet without overcrowding. Fry 3-4 minutes per side until golden brown and crispy.
- Drain and Serve: Transfer croquettes to a paper towel-lined plate. Serve warm with tartar sauce or spicy aioli.
Notes
- Use fresh herbs like dill or parsley for added flavor.
- Make smaller croquettes for party appetizers.
- They can be baked or air-fried for a lighter version.
