- 2 pounds baby potatoes (halved)

Instructions
- Preheat your oven to 425°F (220°C). This high temperature is key to getting those crispy edges!
- In a large bowl, combine the halved baby potatoes, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the potatoes are well coated.
- Spread the potatoes in a single layer on a baking sheet. Make sure not to overcrowd them; you want each potato to have space to crisp up.
- Roast in the preheated oven for about 25-30 minutes, flipping halfway through. Look for that golden brown color and crispy texture.
- Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh herbs before serving.
