- 2 medium zucchini (cut into sticks)
- 1/2 cup Parmesan cheese (grated)
- 1/2 cup bread crumbs (panko for extra crunch)
- 1/4 cup flour (all-purpose or whole wheat)
- 2 large eggs (beaten)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the zucchini into sticks, about 1/4 inch thick. Pat them dry with paper towels.
- In one bowl, combine flour, garlic powder, salt, and pepper. In another bowl, beat the eggs. In a third bowl, mix the Parmesan cheese and breadcrumbs.
- Coat each zucchini stick first in the flour mixture, then dip it in the egg, and finally roll it in the Parmesan breadcrumb mixture.
- Place the coated zucchini fries on the prepared baking sheet in a single layer.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- While the fries are baking, prepare the ranch dip by mixing together sour cream, mayonnaise, garlic powder, onion powder, dill, and lemon juice.
- Serve the crispy zucchini fries warm with the ranch dip.
