  • 2 large yellow onions, sliced into 1/4-inch rings
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar)
  • 2 cups breadcrumbs (panko for extra crunch)
  • Oil for frying (canola or vegetable oil works well)
  • 1/2 cup ketchup
  • 1/2 cup ranch dressing
  • 1/2 cup spicy mustard

Instructions

  • Start by soaking your onion rings in buttermilk for at least 30 minutes.
  • In a large bowl, mix together the flour, baking powder, paprika, garlic powder, salt, and pepper.
  • In another bowl, place the breadcrumbs.
  • Heat about 2 inches of oil in a deep pot over medium-high heat until it reaches 350°F (175°C).
  • Take each onion ring from the buttermilk, dredge it in the flour mixture, then dip it back into the buttermilk, and finally coat it with breadcrumbs.
  • Carefully drop the onion rings into the hot oil, working in batches to avoid overcrowding.
  • Fry them until golden brown, about 2-3 minutes on each side.
  • Remove the rings with a slotted spoon and let them drain on paper towels.
  • While they’re cooling, prepare your dipping trio by mixing the ketchup, ranch dressing, and spicy mustard in separate bowls.
  • Stack your crispy onion rings in a tower and serve with the dipping sauces.
