- 2 large yellow onions, sliced into 1/4-inch rings
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup buttermilk (or milk with 1 tablespoon vinegar)
- 2 cups breadcrumbs (panko for extra crunch)
- Oil for frying (canola or vegetable oil works well)
- 1/2 cup ketchup
- 1/2 cup ranch dressing
- 1/2 cup spicy mustard
Instructions
- Start by soaking your onion rings in buttermilk for at least 30 minutes.
- In a large bowl, mix together the flour, baking powder, paprika, garlic powder, salt, and pepper.
- In another bowl, place the breadcrumbs.
- Heat about 2 inches of oil in a deep pot over medium-high heat until it reaches 350°F (175°C).
- Take each onion ring from the buttermilk, dredge it in the flour mixture, then dip it back into the buttermilk, and finally coat it with breadcrumbs.
- Carefully drop the onion rings into the hot oil, working in batches to avoid overcrowding.
- Fry them until golden brown, about 2-3 minutes on each side.
- Remove the rings with a slotted spoon and let them drain on paper towels.
- While they’re cooling, prepare your dipping trio by mixing the ketchup, ranch dressing, and spicy mustard in separate bowls.
- Stack your crispy onion rings in a tower and serve with the dipping sauces.
