Instructions
- Start by mixing the flour, baking powder, and salt in a large bowl.
- In a separate bowl, whisk together the milk, egg, and olive oil until combined.
- Gradually add the wet ingredients to the dry ingredients, mixing just until combined.
- Fold in the shredded mozzarella cheese and any fresh herbs.
- Heat a non-stick skillet over medium heat and drizzle a little olive oil.
- Pour about 1/4 cup of batter for each pancake into the skillet.
- Cook until bubbles form, about 2-3 minutes, then flip and cook for another 2 minutes.
- Repeat with remaining batter, adding more oil as needed.
- Serve hot with toppings of your choice.
