Instructions

  • Start by mixing the flour, baking powder, and salt in a large bowl.
  • In a separate bowl, whisk together the milk, egg, and olive oil until combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing just until combined.
  • Fold in the shredded mozzarella cheese and any fresh herbs.
  • Heat a non-stick skillet over medium heat and drizzle a little olive oil.
  • Pour about 1/4 cup of batter for each pancake into the skillet.
  • Cook until bubbles form, about 2-3 minutes, then flip and cook for another 2 minutes.
  • Repeat with remaining batter, adding more oil as needed.
  • Serve hot with toppings of your choice.
