  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1/2 cup buttermilk (or milk with a splash of vinegar)
  • 1 cup breadcrumbs (Panko works best for extra crunch)
  • 1/2 cup honey
  • 1/4 cup unsalted butter
  • Optional: chopped green onions for garnish

Instructions

  • Begin by preparing the chicken. Cut the boneless chicken breasts into bite-sized pieces and set aside.
  • In a large bowl, whisk together the flour, garlic powder, onion powder, paprika, salt, and pepper.
  • In another bowl, combine the egg and buttermilk. Mix until well combined.
  • Dip each chicken piece into the flour mixture, then the egg mixture, and finally coat with breadcrumbs.
  • Heat a large skillet over medium-high heat and add enough oil to cover the bottom. Once hot, fry the chicken bites in batches until golden brown, about 4-5 minutes per side.
  • In a small saucepan, melt the butter and stir in the honey until combined.
  • Once the chicken is cooked, toss it in the honey butter sauce until evenly coated.
  • Serve warm, garnished with chopped green onions if desired.
