- 4 medium russet potatoes
- 1/4 cup olive oil
- 1/2 cup grated parmesan cheese
- 3 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the russet potatoes thoroughly.
- Cut the potatoes into wedges.
- Combine olive oil, minced garlic, oregano, paprika, salt, and pepper in a bowl.
- Toss the potato wedges in the bowl until coated.
- Spread the wedges out on a lined baking sheet.
- Bake for 25-30 minutes, flipping halfway through.
- Sprinkle parmesan cheese on top during the last few minutes of baking.
- Garnish with parsley and serve immediately.
