- 2 cups cooked salmon (flaked (fresh or canned))
- 1 cup breadcrumbs (panko works best for extra crispiness)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup green onions (finely chopped)
- 2 cloves garlic (minced)
- 1 large egg
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- Salt and pepper (to taste)
- Oil (for frying (vegetable or olive oil))
Instructions
- In a large mixing bowl, combine the flaked salmon, breadcrumbs, parsley, green onions, and minced garlic.
- In a separate bowl, whisk together the egg, Dijon mustard, lemon juice, salt, and pepper. Add this mixture to the salmon and other ingredients.
- Mix everything together until well combined. You might want to use your hands for this part.
- Form the mixture into patties, about the size of your palm. You should get around 10-12 croquettes.
- Heat about 1/4 inch of oil in a frying pan over medium heat. Once hot, carefully add the croquettes.
- Fry each side for about 3-4 minutes until golden brown and crispy.
- Once cooked, transfer them to a plate lined with paper towels to drain excess oil. Serve warm!
