  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 tablespoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1/4 cup coconut oil

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a shallow dish, mix the shredded coconut, panko breadcrumbs, curry powder, salt, and pepper.
  • Place the flour in another shallow dish, and the beaten eggs in a third dish.
  • Dip each chicken strip first into the flour, then the eggs, and finally into the coconut mixture, pressing down to ensure it sticks well.
  • Heat coconut oil in a large skillet over medium heat. Add chicken strips and cook until golden brown on each side, about 3 minutes per side.
  • Transfer to a baking sheet and bake for 10 minutes, ensuring the chicken is cooked through.
