- 1 pound chicken breast (cut into strips)
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 tablespoons curry powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs (beaten)
- 1/4 cup coconut oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow dish, mix the shredded coconut, panko breadcrumbs, curry powder, salt, and pepper.
- Place the flour in another shallow dish, and the beaten eggs in a third dish.
- Dip each chicken strip first into the flour, then the eggs, and finally into the coconut mixture, pressing down to ensure it sticks well.
- Heat coconut oil in a large skillet over medium heat. Add chicken strips and cook until golden brown on each side, about 3 minutes per side.
- Transfer to a baking sheet and bake for 10 minutes, ensuring the chicken is cooked through.
- Let them cool for a few minutes before serving. Enjoy!
