  • 2 breasts boneless, skinless chicken
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • Vegetable oil for frying (enough to cover the skillet)
  • 4 buns hamburger buns
  • 4 slices cheese (optional)
  • Lettuce, tomato, and pickles (for serving)

Instructions

  • Start by marinating the chicken. In a bowl, combine the buttermilk with a pinch of salt and pepper. Add the chicken breasts, ensuring they are well coated. Let them marinate for at least 30 minutes, or even overnight if you have the time.
  • In a separate bowl, mix the flour, garlic powder, paprika, salt, pepper, and cayenne pepper. This will be your crispy coating.
  • Heat about an inch of vegetable oil in a large skillet over medium heat. You can test the oil by dropping a bit of flour into it; if it sizzles, it’s ready!
  • Take the marinated chicken out and shake off any excess buttermilk. Dredge each piece in the flour mixture, ensuring an even coating.
  • Carefully place the chicken in the hot oil. Fry each piece for about 5-7 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure it reaches an internal temperature of 165°F.
  • Once cooked, transfer the chicken to a paper towel-lined plate to drain any excess oil.
  • Assemble your sandwiches by placing the crispy chicken on the buns. Add cheese, lettuce, tomato, and pickles as desired. Top it off with the other half of the bun.
