- 2 cups cooked shredded chicken (Use rotisserie chicken for convenience.)
- 1 cup shredded cheddar cheese (Feel free to use your favorite cheese.)
- 1/2 cup cream cheese (Softened.)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper (To taste.)
- 1 package refrigerated biscuit dough (About 8 biscuits.)
- 1 egg beaten egg (For egg wash.)
- Cooking spray or oil (For frying.)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix the cooked shredded chicken, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Open the package of biscuit dough and separate it into individual biscuits.
- On a floured surface, flatten each biscuit into a circle about 4 inches in diameter.
- Place a generous spoonful of the chicken mixture in the center of each biscuit.
- Fold the biscuit over the filling and pinch the edges to seal tightly.
- Brush the tops of each pocket with the beaten egg for a golden finish.
- Spray a baking sheet with cooking spray and place the pocket melts on it.
- Bake for 15-20 minutes, or until the tops are golden brown and crispy.
- Let them cool for a few minutes before serving. Enjoy!
