- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup white cheddar cheese, shredded
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Once hot, add diced onion and cook until translucent, about 3-4 minutes.
- Add minced garlic and cook for another minute, stirring frequently to avoid burning.
- Next, add the chicken pieces to the skillet. Season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Once the chicken is cooked, pour in the chicken broth and heavy cream. Stir well to combine.
- Reduce the heat to low and stir in the shredded white cheddar cheese until melted and creamy.
- Add the chopped spinach and cherry tomatoes, cooking just until the spinach wilts, about 2-3 minutes.
- Garnish with fresh parsley if desired and serve immediately.
