  • 1 cup orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper
  • for garnish Fresh basil (optional)

Instructions

  • Begin by cooking the orzo according to package instructions in a pot of salted boiling water.
  • While the orzo cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and season with salt and pepper.
  • Cook the shrimp for 2-3 minutes on each side until they turn pink. Remove them from the skillet.
  • In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  • Stir in heavy cream and bring to a simmer. Add Parmesan cheese and stir until melted.
  • Fold in fresh spinach and cooked orzo. Mix until everything is well combined and heated through.
  • Serve hot, garnished with fresh basil if desired.
