- 1 cup orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- to taste Salt and pepper
- for garnish Fresh basil (optional)
Instructions
- Begin by cooking the orzo according to package instructions in a pot of salted boiling water.
- While the orzo cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and season with salt and pepper.
- Cook the shrimp for 2-3 minutes on each side until they turn pink. Remove them from the skillet.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Stir in heavy cream and bring to a simmer. Add Parmesan cheese and stir until melted.
- Fold in fresh spinach and cooked orzo. Mix until everything is well combined and heated through.
- Serve hot, garnished with fresh basil if desired.
