- 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup spinach (fresh)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Add chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Scrape any brown bits from the pan.
- Add heavy cream, sun-dried tomatoes, and spinach. Stir well and let simmer for about 3-5 minutes until the sauce thickens.
- Return the chicken to the skillet and coat with the sauce. Sprinkle with Parmesan cheese and let simmer for another minute.
- Serve hot and enjoy!
