  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun dried tomatoes, chopped
  • 1 cup spinach
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  • In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
  • Add the chicken to the skillet and cook for 5-7 minutes on each side, until golden brown and cooked through. Remove chicken and set aside.
  • In the same skillet, add minced garlic and sauté for about 30 seconds, until fragrant.
  • Pour in the heavy cream and bring it to a simmer, stirring frequently. Add the chopped sun dried tomatoes and spinach, cooking until the spinach wilts.
  • Stir in the Parmesan cheese until melted and well combined.
  • Add the chicken back into the skillet, spooning the sauce over it. Let it simmer for a few more minutes.
  • Garnish with fresh basil if desired and serve hot.
