- 4 pieces boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup sun dried tomatoes, chopped
- 1 cup spinach
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
- Add the chicken to the skillet and cook for 5-7 minutes on each side, until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds, until fragrant.
- Pour in the heavy cream and bring it to a simmer, stirring frequently. Add the chopped sun dried tomatoes and spinach, cooking until the spinach wilts.
- Stir in the Parmesan cheese until melted and well combined.
- Add the chicken back into the skillet, spooning the sauce over it. Let it simmer for a few more minutes.
- Garnish with fresh basil if desired and serve hot.
