- 4 fillets salmon
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- to taste salt and pepper
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add the spinach to the skillet and cook until wilted, around 2 minutes.
- Pour in the heavy cream, stirring to combine. Let it simmer for 2 minutes.
- Stir in the Parmesan cheese, Italian seasoning, salt, and pepper.
- Place the salmon fillets on top of the creamy spinach mixture.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through.
- Serve hot, garnished with extra Parmesan if desired.
