- 12 noodles lasagna
- 2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
- 1 cup sliced mushrooms
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups marinara sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)
Instructions
- Start by preheating your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add mushrooms, cooking until softened (about 5 minutes). Season with salt, pepper, and garlic powder.
- In a bowl, mix ricotta, egg, spinach, half of the mozzarella, and half of the Parmesan. Stir until combined.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 4 noodles over the sauce, followed by half of the ricotta mixture, half of the mushrooms, and another layer of sauce. Repeat the layers once more.
- Top with the remaining noodles, sauce, mozzarella, and Parmesan.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let it cool for 10 minutes before slicing. Enjoy!
