  • 12 noodles lasagna
  • 2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
  • 1 cup sliced mushrooms
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)

Instructions

  • Start by preheating your oven to 375°F (190°C).
  • Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add mushrooms, cooking until softened (about 5 minutes). Season with salt, pepper, and garlic powder.
  • In a bowl, mix ricotta, egg, spinach, half of the mozzarella, and half of the Parmesan. Stir until combined.
  • Spread a thin layer of marinara sauce on the bottom of a baking dish.
  • Layer 4 noodles over the sauce, followed by half of the ricotta mixture, half of the mushrooms, and another layer of sauce. Repeat the layers once more.
  • Top with the remaining noodles, sauce, mozzarella, and Parmesan.
  • Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  • Let it cool for 10 minutes before slicing. Enjoy!
