- 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 cups fresh spinach (roughly chopped)
- 1 cup mushrooms (sliced)
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1/2 cup grated Parmesan cheese
- Salt and pepper (to taste)
- 1 teaspoon Italian seasoning (optional)
- Fresh parsley (for garnish (optional))
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken pieces to the skillet. Season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the mushrooms and garlic. Sauté for 3-4 minutes until the mushrooms are tender.
- Toss in the chopped spinach and cook until wilted, about 2 minutes.
- Lower the heat and pour in the heavy cream. Stir in the Parmesan cheese until melted and smooth. Add the chicken back to the skillet.
- Let it simmer for about 3-5 minutes, allowing the flavors to meld.
- Garnish with fresh parsley if desired and serve warm.
