  • 1 lb gnocchi (store-bought or homemade)
  • 2 cups fresh spinach (chopped)
  • 1 lb chicken breast (diced)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • 1 teaspoon Italian seasoning (optional)

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season it with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  • Once the chicken is cooked, add the minced garlic and sauté for about 1 minute or until fragrant.
  • Pour in the chicken broth and bring it to a simmer. Let it cook for about 3-4 minutes to reduce slightly.
  • Add the heavy cream and stir until combined. Allow the mixture to simmer for another 2-3 minutes, thickening slightly.
  • Stir in the chopped spinach and let it wilt for about 2 minutes.
  • Add the cooked gnocchi to the skillet and toss everything together until the gnocchi is well coated with the creamy sauce.
  • Finally, stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning as needed and serve immediately.
