  • 1 pound boneless, skinless chicken breasts, diced
  • 4 slices bacon, chopped
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1 teaspoon garlic, minced
  • to taste Salt and pepper
  • 1/2 cup grated Parmesan cheese
  • Olive oil for cooking

Instructions

  • Start by cooking the bacon in a large skillet over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
  • In the same skillet, add diced chicken and cook until golden brown and cooked through, about 6-7 minutes. Season with salt and pepper.
  • Add minced garlic to the chicken and sauté for an additional minute.
  • Stir in the orzo and chicken broth, bringing it to a boil. Lower the heat and simmer for about 10 minutes or until the orzo is tender.
  • Once the orzo is cooked, stir in heavy cream, spinach, and the crispy bacon. Let it cook for another 2-3 minutes.
  • Finally, add Parmesan cheese and season to taste. Serve warm and enjoy!
