- 8 oz fettuccine or pasta of choice
- 1 lb spicy Italian sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tsp Cajun seasoning
- 1/2 tsp cayenne pepper
- 1 cup grated Parmesan cheese
- fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside, reserving a little pasta water.
- In a large skillet over medium heat, add the sausage. Cook until browned and crumbled, about 5-7 minutes. Remove the sausage and set it aside.
- In the same skillet, add onion, bell pepper, and garlic. Sauté until softened, about 3-4 minutes.
- Pour in the chicken broth and heavy cream. Stir in the Cajun seasoning and cayenne pepper. Let it simmer for about 5 minutes.
- Return the sausage to the skillet, mixing well. Add the cooked pasta and Parmesan cheese, tossing everything together.
- Season with salt and black pepper to taste. Garnish with parsley before serving.
