  • 8 oz fettuccine or pasta of choice
  • 1 lb spicy Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tsp Cajun seasoning
  • 1/2 tsp cayenne pepper
  • 1 cup grated Parmesan cheese
  • fresh parsley for garnish

Instructions

  • Cook the pasta according to package instructions. Drain and set aside, reserving a little pasta water.
  • In a large skillet over medium heat, add the sausage. Cook until browned and crumbled, about 5-7 minutes. Remove the sausage and set it aside.
  • In the same skillet, add onion, bell pepper, and garlic. Sauté until softened, about 3-4 minutes.
  • Pour in the chicken broth and heavy cream. Stir in the Cajun seasoning and cayenne pepper. Let it simmer for about 5 minutes.
  • Return the sausage to the skillet, mixing well. Add the cooked pasta and Parmesan cheese, tossing everything together.
  • Season with salt and black pepper to taste. Garnish with parsley before serving.
