Instructions
- Start by cooking the tortellini according to the package instructions. This usually takes about 3-5 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet. Cook for about 3-4 minutes, until they turn pink and opaque. Season with salt, pepper, and red pepper flakes if desired.
- Pour in the heavy cream, stirring to combine. Bring it to a gentle simmer.
- Add the cooked tortellini and fresh spinach to the skillet. Toss everything together gently until the spinach wilts and everything is coated in that creamy goodness.
