- 8 oz penne pasta
- 2 pieces chicken breasts, boneless and skinless
- 1 cup roasted red peppers, pureed
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Start by cooking the penne pasta according to the package instructions. Make sure to salt the water for added flavor.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet.
- Cook the chicken for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let it rest.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, pour in the pureed roasted red peppers and stir.
- Add the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese until melted and combined.
- Slice the cooked chicken and add it back to the skillet along with the cooked pasta. Toss everything together until well coated in the creamy sauce.
- Serve hot, garnished with fresh basil if desired. Enjoy!
