  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup roasted red peppers, pureed
  • 1 cup heavy cream
  • 1 each onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

  • to taste Pepper
  • for garnish Fresh basil (optional)

Instructions

  • In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and diced chicken. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  • Pour in the pureed roasted red peppers and heavy cream. Stir well to combine.
  • Allow the mixture to simmer for 5 minutes, letting the flavors meld together. Season with salt and pepper to taste.
  • Serve the creamy chicken mixture over the cooked rice. Garnish with fresh basil, if desired.
