- 2 cups cooked rice
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup roasted red peppers, pureed
- 1 cup heavy cream
- 1 each onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil

- to taste Pepper
- for garnish Fresh basil (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and diced chicken. Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Pour in the pureed roasted red peppers and heavy cream. Stir well to combine.
- Allow the mixture to simmer for 5 minutes, letting the flavors meld together. Season with salt and pepper to taste.
- Serve the creamy chicken mixture over the cooked rice. Garnish with fresh basil, if desired.
