- 12 oz penne pasta
- 1 cup ricotta cheese
- 1 head garlic
- 1/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the top off the head of garlic, drizzle with a little olive oil, and wrap it in foil. Roast for about 30 minutes until the cloves are soft and caramelized.
- While the garlic roasts, cook the penne according to package instructions. Drain and set aside.
- In a bowl, combine the roasted garlic (squeeze the cloves out of their skins), ricotta, heavy cream, and Parmesan. Mix until smooth. Season with salt and pepper.
- In a large mixing bowl, combine the cooked penne with the sauce. Toss until the pasta is well coated.
- Plate the pasta and garnish with fresh basil and additional Parmesan if desired. Enjoy your creamy masterpiece!
