- 4 large potatoes (peeled and diced)
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1/2 cup cream cheese (softened)
- 1/2 cup breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper (to taste)
- Oil (for frying)
Instructions
- Start by boiling the diced potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
- In a large mixing bowl, mash the potatoes until smooth. Then, mix in the cream cheese, shredded cheese, garlic powder, onion powder, salt, and pepper until everything is well combined.
- In a separate bowl, beat the eggs. Add the breadcrumbs to a plate for coating.
- Using your hands, form small balls of the potato mixture, about the size of a golf ball. Dip each ball in the beaten eggs, then roll them in the breadcrumbs to coat evenly.
- Heat oil in a deep pan over medium heat. Once hot, carefully drop in the potato puffs, frying in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
- Serve warm with your favorite dipping sauce, and enjoy!
