Creamy Mushroom Chicken Pasta

  • 2 cups pasta (penne, fettuccine, or your choice)
  • 1 lb chicken breast, diced
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  • Cook the pasta according to package instructions. Drain and set aside, reserving a little pasta water.
  • In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  • In the same skillet, add sliced mushrooms and cook for about 5 minutes until they are soft and browned. Add minced garlic and cook for an additional minute until fragrant.
  • Lower the heat and pour in the heavy cream. Stir to combine, then add the Parmesan cheese, mixing until melted and creamy.
  • Add the cooked pasta and chicken back into the skillet. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
  • Garnish with fresh parsley and serve immediately. Enjoy your meal!
