- 2 cups pasta (penne, fettuccine, or your choice)
- 1 lb chicken breast, diced
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add sliced mushrooms and cook for about 5 minutes until they are soft and browned. Add minced garlic and cook for an additional minute until fragrant.
- Lower the heat and pour in the heavy cream. Stir to combine, then add the Parmesan cheese, mixing until melted and creamy.
- Add the cooked pasta and chicken back into the skillet. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
- Garnish with fresh parsley and serve immediately. Enjoy your meal!
